Great work! The crumbs are a nice touch and I'm very impressed with the care you've taken with the knife blade. If I could suggest one thing it would be to make the edges of the cut cheese a bit less perfect, kinda rounded off a bit, and perhaps a bumpiness added to the cut faces to suggest the slight stickiness of cheese. This is actually one of the more difficult things to do in any CGI project, since computers do mathematics really well it is easy to achieve perfect edges, lines, curves etc. Introducing a bit of chaos is tricky to get right but can make all the difference if photo-realism is the goal. That's not a criticism, more an observation, and it's something I need to work on in my own projects.
Overall I'd say challenge accepted, and achieved!

Anyway, as a Dutch person I can say out of experience that it is rare to see a Dutch cheese without at least some holes (bubbles) in it. just a few will do.

Also, if you want to improve it further, as you can see as a cheese ripens over time, the yellow gets slightly darker on the outside of the cheese. You could add a texture for some realism.
In all, I like the cheese, but you could make it look a little more yummy by adding some realism :D
