This biggest problem I have with modeling is Symmetry. If I'm modeling a mecha, which tends to have a lot of raised panels and panel lines, there's no way I can get that even by hand. Splitting in two and joining the points gets very messy and tends to mess with normals. With lots of points and polygons this gets very difficult to do.

So what do I do?

I think there's no other way than modeling one half, mirroring it and join the parts... If you use the Merge Points command carefully, your model shouldn't be messed up;
There is a problem if the points that should be merged are too far from each other - then you have to set a high value in the Merge points dialog box and maybe some more points that shouldn't be merged will merge too...

Here are some links to the manual: Mirroring  Merging points (I recommend the second link...)

when i model something that i think will be modeled, I make the points along the center as close to the midle as i can. this way i can use a small merge points value to be sure that i don't mess up the points.
